BBQ Beef - Maureen Hoock MO
Its a simple crockpot/slow cooker recipe, made with a chuck roast or
other similar cut of meat.
2 1/2- 3 pound chuck roast
1 medium/large onion
12 ounce can regular/diet
cola
1/3 cup Worcestershire
sauce
1 1/2 tablespoon apple cider vinegar
1 1/2 tablespoon beef boullion
3/4 teaspoon dry mustard
3/4 teaspoon chili powder
1/8-1/2 teaspoon cayenne pepper
3+ cloves garlic, minced
1 cup ketchup
Buns
Place roast in crockpot and add diced onion. Combine cola, Worcestershire sauce, vinegar, boullion, dry mustard, chili powder, cayenne pepper, and garlic. Reserve and chill 1 cup of
sauce. Pour remaining sauce over
roast. Cover and cook on high for 6
hours or low for 9 hours. Remove roast
and shred with 2 forks. Combine reserve
sauce with ketchup. Pour over shredded
meat. Serve on buns.
Yield: About 24 sandwiches
Preparation time: 15 minutes
Cook time: 6 hours on high or 9
hours on low
Finish: 15 minutes
