All Spice
Cake
Standard –
Layers are symmetrical in shape with slightly rounded tops. Rich and spicy in flavor with even crumb,
fine grain, moist and tender in texture.
Recipe –
2 cups
sifted cake flour
2 teaspoons baking powder
1/3 teaspoon salt
1/2 teaspoon ground
cinnamon
1/2 teaspoon ground
cloves
1/2 teaspoon ground
ginger
1 stick butter
1 cup granulated sugar
2 large eggs
3/4 cup milk
Directions-
Preheat oven to
375-degrees. Sift together flour, baking
powder, salt and spices onto wax paper.
Put butter and sugar in a mixing bowl and cream until light and fluffy. Stir in sifted dry ingredients alternately
with milk to make a batter. Coat two
layer baking pans with cooking spray and lightly dust with flour. Divide batter equally between 2 pans. Bake for about 25 minutes or until cake
springs back when touched. Place pans on
a wire rack and cool for 5 to 10 minutes.
Remove cake from pans and place on wire rack to cool. Frost when cold.
Yield: Two 9-inch round layers.
Presentation –
Frost with whipped
cream cheese frosting and sprinkle a few chopped pecans on top.
