¾ cup fresh Anise
leaves*
4 cups boiling
water
Honey
Place leaves in a saucepan and pour boiling water
over. Let steep for 6 to 8 minutes or to
your taste. Prepare the teapot by
rinsing with hot running water for 1 minute.
Pour tea into the teapot through a fine strainer lined with a natural
paper (coffee) filter. Stir in
honey. Enjoy!
Yield: 4

*Harvest and preparation – For fresh use, harvest leaves
as they mature. Cut early in the
morning, just after the dew has evaporated and before the sun is hot. Discard tough stems. Place leaves in a colander and rinse under
cold running water. Pat
dry with paper towels. Stack
leaves together and roll up. Cut thin
slices with a very sharp knife.
