Apple Cake – Rudy W. Engel

“This is my sister Ella Engel’s recipe.  It is moist and tastes good.”

 

2     cups granulated sugar

1 ½ cups Wesson oil

2     eggs

3     cups peeled chopped apples

1     cup chopped nuts

3     cups flour

1     teaspoon cinnamon

1     teaspoon baking soda

½    teaspoon salt

2     teaspoons vanilla

 

Preheat oven to 350-degrees.  Beat together the sugar, oil and eggs.  Stir in all remaining ingredients.  The dough will be thick.  Pour into a greased 13 x 9 x 2-inch pan.  Bake for 45-55 minutes or till a toothpick inserted in center comes out clean.
