Apple Pie

Farmer’s Market

8   Jonathan apples, peeled, cored and sliced

1   tablespoon fresh lemon juice

1   cup granulated sugar

¼  cup all-purpose flour

1   tablespoon ground cinnamon

3   tablespoons cold butter, cut into small pieces

     Double crust pastry

Preheat oven to 375-degrees.  Place apple slices in a large bowl and toss to coat with lemon juice.  In a small bowl, sift together sugar, flour and cinnamon.  Add dry ingredients to apples and toss to coat evenly.  Transfer to a pastry lined 9-inch pie plate.  For vents, cut apple designs in top crust.  Seal by bringing top crust over and under bottom crust, pinching to seal.  Flute edge and lightly sprinkle granulated sugar over.   Cover edge with foil.  Bake for 25 minutes.  Remove foil.  Bake another 20 minutes or till the top is golden and fruit is tender.

Yield:  8 servings.
