Apple Strudel

Farmer’s Market

1   pound Jonathan apples, peeled, cored and very thinly sliced

¼  cup golden raisins

1   teaspoon ground cinnamon

2   tablespoons granulated sugar

2   tablespoons all-purpose flour

½  16-ounce package phyllo dough

¼  cup butter, melted

Preheat oven to 375-degrees.  In a bowl, combine raisins, cinnamon, sugar and flour.  Spread several sheets of phyllo dough generously with melted butter and lay them atop of the other on a baking sheet lightly coated with cooking spray.  Spread the fruit mixture evenly to within 1-inch of the edges of the top sheet.  Roll sheets up to form a log shape.  Brush with melted butter again.  Bake for 35 minutes until pastry is golden brown and fruit is tender.

Yield:  4 servings.
