¼ cup butter or margarine
¼ cup all-purpose
flour
½ teaspoon salt
½ teaspoon pepper
2 cups milk
1 cup shredded
cheddar cheese
5 cups baking
potatoes, peeled and thinly sliced
½ cup sweet
yellow onion, chopped
Preheat oven to 350-degrees. In a large saucepan, melt butter/margarine
over low heat. Make a roux by stirring together flour and seasoning with a wire
whisk. Gradually whisk in milk. Bring to a boil and stir constantly for 1
minute or until thickened. Immediately
remove from heat and stir in cheese until melted. Coat a 13 x 9 x 2-inch baking pan with
cooking spray. Add sliced potatoes and
sprinkle onions over. Evenly pour sauce
over. Cover and bake for 1 hour or until potatoes are fork tender. Uncover and bake for a few minutes until top
browns.
