Au Gratin Turnips
2 pounds
turnips, peeled and sliced ¼ inch thick
½ stick butter or
margarine
½ cup grated
Parmesan cheese
1 cup
breadcrumbs
1 cup heavy
cream or half-and-half
Salt and
fresh ground pepper in taste
Preheat oven to 350-degrees. Blanch turnips for 5 minutes in a large pot
of boiling water. Remove and drain. Coat a 9-inch square baking pan with fat-free
cooking spray. Place a layer of turnips
in casserole and dot with half the butter/margarine. Season and cover with half of the
Parmesan. Repeat. Pour cream over and top with breadcrumbs. Cover loosely and bake until turnips are
tender but not mushy, about 1 hour.
