4 boneless skinless chicken breasts, cut in half
1 cup light brown
sugar, divided
4 peaches,
peeled, pitted and thinly sliced
½
teaspoon ginger
¼
teaspoon cloves
2 tablespoon
lemon juice
Preheat oven to 350-degrees. Wash chicken under cold running water. Drain and pat dry with paper towels. Place chicken in a 13 x 9 x 2-inch baking pan
coated with cooking spray. Sprinkle ½
cup brown sugar over. In a bowl, add
prepared peaches, ginger and cloves.
Toss to coat with lemon juice.
Layer peaches over chicken.
Sprinkle remaining ½ cup of brown sugar over peaches. Bake for 50 to 55 minutes or until meat
juices run clear.
Yield: 8
