Baked Halibut
1 pound halibut steak
¼ cup flour
4 tablespoons
butter
½ pound sliced
mushrooms
½ cup thinly
sliced sweet yellow onion
2 cloves garlic,
chopped
1 cup dry white
wine
1 cup heavy cream
Salt and fresh ground pepper to taste
Fresh Parsley
Preheat oven to 350-degrees. Place steak in a baking pan coated with
cooking spray. Dot with butter and bake
about 10 minutes. Sprinkle steak with
mushrooms, onions, garlic pieces, and wine.
Cover baking pan with foil and bake another 15 minutes or until flesh
flakes easily and mushrooms are tender.
Transfer halibut, mushrooms and sliced onion to a warm
serving platter. Add cream to the liquid
remaining in pan and heat to boiling. Add
salt and pepper to taste and pour over halibut steak. Garnish with fresh parsley.
Yield: 4 servings.
