4 baking
potatoes, about 2 pounds
2 cloves
garlic, minced
1 tablespoon
Canola oil, divided
1/2 cup 2 % milk
Salt and fresh ground pepper to taste
Preheat oven to
400-degrees. Scrub potatoes with a brush
and pat dry. Pierce potatoes several
times with a fork. Bake
for 50 to 60 minutes or until tender. Cool potatoes slightly, cut in half, and
scoop out pulp. In a large pan, sauté
garlic in oil. Add potatoes, milk, salt
and pepper. Put through a food mill,
ricer, or mash by hand.
Do not use an
electric mixer.
Yield: 4 servings.
