Baked Oysters

 

Fish Recipes

 

4   tablespoons butter

4   tablespoons chopped green onions

2   tablespoons chopped parsley, discard stems

˝  cup chopped fresh mushrooms

     Salt and fresh ground pepper to taste

16  medium oysters

     Cracker crumbs

 

Preheat oven to 425-degrees.  Melt butter in a skillet over low heat.  Add onions, parsley and mushrooms.  Sauté for 5 minutes or until the onions are translucent.

Salt and pepper to taste.  Place oysters in a single layer.  Coat a baking dish with cooking spray.  Pour onion mixture over oysters.  Top with cracker crumbs. Bake for 15 minutes or until oysters are cooked.

Yield:  4 servings.
