¼  cup olive oil

4   sprigs fresh Thyme

1   15-ounce can diced tomatoes, drained

2   cloves garlic, minced

½  cup finely chopped red onion

1   tablespoons lime juice

Soak fillets in ice water for a few minutes.   Pat dry with paper towels.  Lay fillets skin side down in a single layer in baking pan.  In small bowl, stir together the olive oil, thyme, tomatoes, garlic, onion, and lime juice.  Season fillets with salt and pepper.  Spoon tomato mixture evenly over.  Bake the fish, uncovered for 15 to 20 minutes or unit it flakes easily.

Yield:  4 servings.

*Harvest and preparation of Thyme – For fresh use, harvest leafy stem ends when plants are just beginning to flower.  Cut early in the morning, just after the dew has evaporated and before the sun is hot.  Discard tough stems.  Place stem ends in a colander and rinse under cold running water.  Pat dry with paper towels.  Stack stem ends together.  Cut thin slices with a very sharp knife.
