Baked Trout Amandine
4 dressed trout
4 tablespoons
melted butter
Salt and fresh
ground pepper to taste
Almond topping
½ cup toasted
slivered almonds
2 tablespoons
butter
½ teaspoon salt
1 tablespoon
lemon juice
Preheat oven to 400-degrees. Soak trout in ice water for a few minutes. Rinse and pat dry with paper towels. Coat a large shallow baking pan with cooking
spray. Season trout with salt and pepper
Place trout on baking pan and drizzle
with melted butter. Bake uncovered 20
minutes or until fish flakes easily with a fork.
Lightly brown butter in skillet. Add almonds, salt and lemon juice. Just before serving top fish with buttered
almonds.
Yield: 4 servings.
