Baking Powder Biscuits- Roll & Cut

Standard

Biscuits should by symmetrical in shape with straight sides and almost flat top.  Crust should be crisp and golden brown.  Crumbs should be creamy white, medium fine in grain, flaky moist and tender in texture.

 

Recipe -

2     cups all-purpose flour

1     tablespoon baking powder

1/2  teaspoon salt

1/4  cup solid shortening

3/4  cup milk

 

Directions -

Preheat oven to 425-degrees.  Sift together flour, baking powder and salt into a mixing bowl.  Using a pastry blender, cut in shortening until mixture is about a fine as corn meal.  Add milk all at once and stir together to make a soft dough.  Turn dough onto a well floured pastry cloth or board.  Knead with floured hands 8 to 12 times.  Roll dough lightly with a floured rolling pin until ½-inch thick.  Cut into rounds with a floured cookie cutter.  Lift cut biscuits with a spatula and place about 1-inch apart. Press extra dough together and cut more biscuits.  Bake on a nonstick baking sheet for 12 to 15 minutes.

Yield:  1 dozen biscuits.

 

Presentation –

Serve immediately on a warm platter.  Accompany with butter, honey or syrup.
