Batter Fried Scallops

1   pound scallops

 

Batter

3   tablespoons oil

1   large egg, beaten

½  cup milk

1   cup all-purpose flour

2   teaspoons granulated sugar

½  teaspoon salt

½  teaspoon fresh ground pepper

     Oil for deep frying. 

 

Preheat oil to 365-degrees in a deep fryer or deep saucepan.  Whisk together egg, milk and 3 tablespoons oil in a bowl.  Sift together flour, sugar, salt and pepper.  Add to egg mixture and beat until smooth.  Dip scallops into batter.  Fry a few scallops at a time for 2 to 3 minutes (depending on size) or until golden brown.  Turn as needed.  Drain on paper towels.  Serve with tarter sauce. 

Yield:  4 servings.
