Batter Fried Shrimp

1   pound shrimp, peel and devain

 

Batter

3   tablespoons olive oil

1   large egg, beaten

½  cup milk

1   cup all-purpose flour

1   teaspoon granulated sugar 

1   teaspoon seasoned salt

     Vegetable oil for deep-frying

 

Preheat oil to 365-degrees in a deep fryer or deep saucepan.  Whisk together egg, milk and oil in a bowl.  Sift together flour, sugar and salt.  Add to sifted mixture to egg mixture and beat until smooth.  Dip shrimp into batter.  Fry a few shrimp at a time for 2 to 3 minutes (depending on size) or until golden brown.  Drain on paper towels.  Serve with cocktail sauce. 

Yield:  4 servings.
