Beer Battered Onion Rings
1 ½ cups
all-purpose flour
1 ½ cups beer,
room temperature
½ teaspoon salt
½ teaspoon fresh
ground pepper
2 large Vidalia
or sweet yellow onions
Vegetable oil
Pour 3-inches of oil into a heavy saucepan. Preheat to 370-degrees.
To prepare batter-
Thoroughly whisk together flour, seasoning and beer. Let batter stand covered at room temperature
for at least two hours.
To prepare onions-
Peel, slice ¼-inch thick and separate onions into
rings. Place on a baking sheet covered
with paper towels. Lightly cover and let
dry for about 1 hour.
To fry-
Using tongs, dip a few onion rings into the batter and
then put into the hot oil. Fry until light
golden brown. Drain between paper
towels.
Yield: 6
servings.
