Bran Muffins

Multi-Bran cereal combines the bran of rice, corn and wheat to provide fiber in the diet.  Fiber, or roughage is the nondigestible part of plant food with great health benefits.  High-fiber foods are filling and nutritious Fiber helps control hunger by taking up space in your stomach and slowing down digestion.  For added nutrition and variation try adding ˝ cup raisins, small pieces of dried fruit or nut pieces.   

 

Preparation time:  About 15 minutes. 

 

Equipment you’ll need:  Rolling pin, zip lock bag, 2 mixing bowls, liquid measuring cup, nested (solid) measuring cups, measuring spoons, wooden spoon, table knife and fork, 12 cup muffin baking pan and cooling rack.

 

Safety: Use dry potholders to put muffin pan into the oven and to remove.  Use a potholder to hold hot muffin pan while removing muffins to cooling rack. 

 

Recipe:

3     cups Multi-Bran cereal

1     cup all purpose flour

1     tablespoon baking powder

2     large eggs

1     cup milk

3     tablespoons unsalted butter, softened

1/4  teaspoon kosher salt

 

1.   Preheat oven to 350-degrees. 

2.   Place cereal in zip lock plastic bag and partially close.  Using a rolling pin finely crush cereal.   

3.   Add flour and baking powder to crushed cereal and mix together with a fork.

4.   In another bowl mix together eggs, milk and butter.. 

5.   Add liquid ingredients to dry ingredients and mix together with a wooden spoon. 

6.   Use liners or coat muffin cups with a spray of canola oil.

7.   Using a small measure fill each muffin cup two-thirds full. 

8.   Bake for 15-18 minutes or until a toothpick inserted in center comes out clean.

9.   Wait 3 minutes before removing from pan.  Loosen each muffin with a table knife and place on

      cooling rack. 

10. Serve warm.  Store leftovers in a sealed container and add a piece of bread to help retain moisture. 

       Yield:  10-12 muffins.

 

Clean up: Turn off oven immediately after baking.  During baking time straighten drawers and cabinets.   Always leave a clean kitchen!
