Broccoli Cauliflower Salad

 

Quick and Easy

 

1   small head cauliflower, separated into florets

1   small head broccoli, separated into florets

1   red bell pepper, chopped

1   sweet yellow onion, chopped

4   ounces provel rope cheese

1   2-ounce can sliced ripe olives, drained

 

Dressing

1   cup mayonnaise

1   tablespoon white vinegar

1   tablespoons granulated sugar

     Salt and fresh ground pepper to taste

 

Garnish

4  slices bacon, fried and crumbled

2  hard cooked eggs, peeled and sliced

 

Place cauliflower, broccoli, pepper, onion, cheese and olives in a salad bowl.  Stir to mix.   Whisk together all dressing ingredients.  Pour over salad and toss to coat.  Cover and chill for at lest 1 hours before serving.  Garnish with crumbled bacon and hard cooked egg slices. 

Yield:  8 servings.
