Broiled Bluegill
1 pound Bluegill
Lemon juice
Salt and fresh
ground pepper
Hendrickson’s
sweet vinegar and olive oil dressing
Preheat broiler.
Adjust broiling rack to within 5-inches of the heat. Clean the fish by removing scale and
entrails. Soak in ice water for a few
minutes. Drain and pat dry with paper
towels. Inside and out, brush the fish
with lemon juice. Salt
and pepper to taste. Coat the broiling
rack with cooking spray. Arrange fish on
rack and baste with dressing. Broil for 3-4 minutes or until flesh starts to turn brown. Turn over, baste and broil for an additional 3
to 4 minutes or until flesh flakes easily when tested with a fork.
*Broiling time will vary depending on the size of each
fish.
