Broiled Flounder
1 pound flounder
fillets
½ pound fresh
mushroom
2 medium
tomatoes, diced
1 tablespoon
olive oil
½ cup sweet yellow
onion, coarsely chopped
2 cloves garlic,
crushed
2 teaspoons
Italian seasoning
¼ teaspoon salt
¼ teaspoon fresh
ground pepper
Olive oil
Preheat broiler.
Soak fillets in ice water for a few minutes. Rinse under cold running water and pat dry
with paper towels. Clean mushrooms, thinly
slice, and set aside. In a skillet, heat
oil over medium-high heat. Add onion,
garlic, oregano, salt, pepper, mushrooms and diced tomatoes. Sauté until mushrooms are tender and than remove
from heat. Coat a shallow baking pan with cooking spray. Lay fillets in baking pan, brush with oil, and
spoon mushroom mixture over. Place
baking pan about 5-inches from the heat and cook until fish flakes easily.
Yield: 4
servings.
