2 3/4-inch
thick salmon steaks
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons low-sodium soy sauce
1 teaspoon honey
1/2 teaspoon dry
mustard
1/2 teaspoon ginger
Salt and fresh ground pepper
In a shallow dish,
whisk together all marinade ingredients.
Marinate salmon for at least one hour.
Remove salmon and place on a broiling pan coated with a spray of Canola
oil. Baste with marinade and broil for
about 5 minutes on each side, depending on the thickness. Watch carefully and check for doneness. Season to taste. Serve immediately. Garnish with a lemon wedge and a sprig of
parsley.
Yield: 2 servings.
