Broiled Tomatoes/Basil

Recipe Ladies Family Herb Garden

 

2   large ripe red tomatoes, halved horizontally

     Salt and fresh ground pepper

     Parmesan cheese

     Fresh Basil leaves, * chopped

 

Preheat broiler to 500-degrees.  Coat broiler pan with cooking spray.  Place tomatoes cut sides up on broiler pan rack.  Sprinkle with salt, pepper and Parmesan cheese.  Place broiler pan about 6-inches from the heat. 

Broil 6 to 8 minutes or till lightly browned.  Leave oven door partially open to allow air to circulate.  Place 2 tomato halves on individual serving plates and garnish with fresh chopped basil. 

Yield:  2 servings.

 

*Harvest and preparation – For fresh use, harvest leaves as they mature.  Cut early in the morning, just after the dew has evaporated and before the sun is hot.  Discard tough stems.  Place leaves in a colander and rinse under cold running water.  Pat dry with paper towels.  Stack leaves together and roll up.  Cut into thin slices with a very sharp knife.
