Buckwheat Biscuits
1 ¼ cups
all-purpose flour
¾ cup buckwheat
flour
1 tablespoon
baking powder
½ teaspoon salt
½ cup solid
shortening
¾ cup milk
Preheat oven to 400-degrees. In a bowl, combine flours, baking powder and
salt. With a pastry blender, cut in
shortening until mixture looks like small peas.
Add milk and stir until mixed.
Turn onto a floured surface and knead 6 to 8 times. If sticky, work in a little more flour. Pat to 1-inch thickness and cut with a 2-inch
biscuit cutter. Place on a baking sheet
coated with cooking spray. Bake for 18 to 20 minutes or until lightly browned.
