Buckwheat Pancakes

 

Country Cooking

 

½   cup Buckwheat flour

½   cup whole-wheat flour

2    teaspoons baking powder

¼   teaspoon salt

1    tablespoon brown sugar

1    cup milk

2    tablespoons vegetable oil

1    large egg

 

 

Sift together both flours, sugar, baking powder and salt and set aside.  Mix together milk, egg and oil with a wire whisk.  Gently stir dry ingredients into wet ingredients. Coat griddle with a cooking spray and preheat on medium-high.  For each pancake pour ¼ cup batter onto hot griddle.  Cook pancakes until puffed and dry around edges.  Turn and cook other sides until golden brown. 

Yield:  8 pancakes.
