4 baking potatoes, peeled, cooked and sliced
1 cup milk
2 tablespoons flour
2 tablespoons
butter
¼ teaspoon salt
¼ teaspoon fresh
ground pepper
1 cup shredded
Cheddar cheese
¼ cup grated
Parmesan cheese
¼ cup dry
breadcrumbs
Preheat oven to 350-degrees. In a saucepan, whisk together butter and flour
making a roux. Gradually add milk and
seasoning. Whisk over medium heat until
thickened. Remove from heat and stir in
cheeses. Place potatoes in a 9 x 9 x 2-inch baking pan coated with fat-free cooking
spray. Pour cheese mixture over. Sprinkle bread crumbs over top. Bake for 30 minutes or
until heated through.
Yield: 4 servings.
