Cheese
Truffles
On New Years Day, serve your family a plate of savory cream cheese
appetizers.
Cream cheese and Cheddar cheese are mixed with seasonings and rolled
into truffle-like balls. Minced roasted red peppers and green onions can be added
for more color and flavor. Roll the
individual bites in a variety of coatings and serve on a plate with whole grain
crackers. Enjoy cooking, but always
leave the kitchen clean.
Recipe
1 8-ounce
package cream cheese, softened
1 4-ounce package finely shredded
Cheddar cheese (1 cup)
1 teaspoon garlic powder
Dash red ground pepper or
paprika
Whole grain crackers
Coatings
Chopped pecans, walnuts,
or almonds
Toasted sesame seeds
Grated Parmesan Cheese
Dried
parsley or fresh parsley, minced and stems removed
Beat cream cheese, shredded cheese, garlic powder, red pepper with an
electric mixer until well blended. Cover
and refrigerate until chilled. Shape cheese mixture into 12 bite size balls, each about 1- inch
in diameter. Roll in selected toppings. Cover and refrigerate until ready to
serve. Serve with whole grain crackers.
Yield: 12 servings.
