Sarah’s “Lite” Recipes

 

4       skinless, boneless chicken breast halves

Marinade

1 1/2 cups pineapple juice

1/2    cup low-sodium soy sauce

1/2    teaspoon garlic powder

1/2    teaspoon ground ginger

1/2    teaspoon fresh ground pepper

1/2    teaspoon salt

 

In a large bowl, whisk together marinade ingredients.   Place chicken in marinade and add enough water to cover.  Cover and refrigerate overnight.  Heat a grill pan on medium high and coat with a spray of Canola oil.  Drain marinade.  Place chicken on grill pan and cook for 5 to 7 minutes on each side.  Chicken is well done when juices run clear. 

Yield:  4 servings.
