Chicken Quesadillas

 

Quick and Easy

 

8    8-inch flour tortillas

1    tablespoon Taco seasoning

2    cups cooked chicken, chopped into bite-size pieces

2    cups shredded Monterey Jack/Colby cheese

 

Preheat oven to 400-degrees.  Cook chicken in microwave.  Cool and cut into bite-size pieces.  In a bowl, mix together chicken and seasoning. Coat a large baking sheet with cooking spray and place on 4 tortillas.  Divide seasoned chicken and cheese between.  Top with remaining tortillas.  Bake for 6 to 8 minutes or until

cheese is melted.  

Yield:  4 servings.
