Chip Coffee Cake
Your family will love a
streusel coffeecake served with a glass or fresh orange juice for
breakfast. Pieces of packaged chocolate
chip cookies are stirred into a cake mix.
Before baking, it sprinkled with a pecan, coconut, brown sugar, and
cinnamon streusel topping Just before serving, drizzles with frosting or
decorating gel. Enjoy cooking, but
always clean up.
Recipe
26 chocolate
chip cookies, divided
1 18.25-ounce package yellow cake mix
1/2 cup dairy sour cream
2/3 cup chopped pecans
1/2 cup flaked sweetened coconut
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/3 cup unsalted butter, melted
Preheat oven to 350-degrees. On
a sheet of wax paper, break 16 cookies into coarse pieces. Finely crush remaining 10 cookies with a
rolling pin. Set both aside.
Prepare cake mix batter according to package directions. Blend in sour cream. Stir in coarse pieces of cookies. Pour batter into a 13 x 9 x 2-inch baking pan
coated with a spray of canola oil. In a
bowl, stir together fine cookies crumbs, pecans, coconut, brown sugar, and
cinnamon. Drizzle over butter and stir
to mix with a fork. Sprinkle evenly over
cake batter. Bake for 40 minutes or
until a pick inserted in center comes out clean. Cool completely. Drizzle with decorating gel or frosting. Cut into squares to serve.
Yield: 12 servings.
