Chocolate
Chunk Cookies
Bake
up a wonderful summer snack! Delicious chewy
cookies are filled with chocolate chunks.
Semi-sweet chocolate has cocoa butter and sugar
added and is most frequently used in recipes
as an ingredient. Do not substitute milk chocolate because in
addition to extra cocoa butter and sugar, it has milk and vanilla added. Chips or morsels can be substituted for
chunks. For a bit of
crunch and nutrition, stir in a cup of chopped pecans or walnuts. Turn off the oven immediately after use. Leave the kitchen sparkling clean.
Recipe
3/4 cup granulated sugar
3/4 cup packed light brown
sugar
2 sticks unsalted butter, softened
2 large eggs
2 teaspoons pure vanilla extract
1 1/4 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 11.5-ounce bag semi-sweet chocolate
chunks
Preheat oven to 350-degrees. Cream together butter and sugars until light and fluffy (about 2
minutes). Add eggs and vanilla.
On a piece of wax paper sift together flours and baking soda. Stir into butter mixture. Fold in chocolate chunks. Bake on
a cookie sheet lined with parchment paper for 10 to 12 minutes or until light golden
brown. Remove from pan and allow to cool on a wire
rack.
Yield: 4 dozen.
