Chocolate Eggless Cake

 

Sarah’s “Lite” Recipes

 

1     cup granulated sugar

1     stick butter, softened

1/2  cup cocoa

2     cups cake flour

1     teaspoon baking soda

1     cup sour milk *

2     teaspoons vanilla extract

 

Preheat oven to 350-degrees.  In a mixing bowl, cream the sugar and margarine with an electric mixer.  In another bowl, sift together cake flour, cocoa and baking soda.  Alternately add milk and dry ingredients to creamed mixture.   When all ingredients are mixed, beat on medium-high for 3 minutes to incorporate additional air.   Stir in vanilla.   Pour into a 8-inch round pan coated with a spray of Canola oil.  Bake for 30 minutes or until a toothpick inserted in center comes out clean. 

 

*To sour milk, add 1 tablespoon vinegar to 1 cup milk.  Let stand for 15 minutes, stirring occasionally.
