1 ½ cups confectioners’ sugar
¾ cup butter
or margarine, softened
1 large egg
1 teaspoon
vanilla*
1 teaspoon
baking soda
¼ teaspoon
salt
1/2 teaspoon
cream of tartar
2 ½ cups
all-purpose flour
Preheat oven to 375-degrees. With an electric mixer, cream together sugar and butter/margarine. Add egg and vanilla. In another bowl, sift of mix together baking powder flour and salt. Add dry ingredients to creamed mixture. Beat until blended. Cover dough and refrigerate for at least 2 hours. On a lightly floured surface, roll dough to 1/8-inch thickness. Sprinkle a little granulated sugar on top of dough and gently roll in. Shape cookies with a floured cutter. Place on cookie sheet lightly coated with cooking spray. Bake for 7 to 8 minutes until very light golden brown. Cool on wire rack.
Yield: 2 dozen cutouts.
* Lemon, orange, or
almond extract can be substituted.
Note! For easier rolling, chill rolling board,
rolling pin, and cutters for at least 2 hours.
