Chuck Wagon Round-up

Kids Cooking

Enjoy the open range flavor of a main dish meal cooked in the comfort of your kitchen.  Begin with a box mix of rice and vermicelli sautéed and flavored with beef broth and seasoning.   It is cooked until tender with corn.  Browned ground beef, barbecue sauce or salsa, and Cheddar cheese are stirred in.  Chuck Wagon Round-up is delicious served with a tossed green salad and crusty French bread.

Preparation time:  About 15 minutes

Equipment you’ll need:    Non-stick large skillet/lid, measuring spoons, solid (nested) measuring cups, liquid measuring cup, wooden spoon, utility spoon, serving plates and spoon

Safety:  Ask for adult supervision when frying the ground beef.  Carefully stir other ingredients into hot rice mixture.

Recipe:

3/4    pound lean ground beef

1       6.8-ounce package Rice-A-Roni Beef Flavor

2       tablespoons unsalted butter

1       10-ounce box frozen whole kernel corn, thawed

3/4    cup barbecue sauce or chunky salsa

1 1/2 cup finely shredded mild cheddar all natural cheese

1.  In a skillet over medium heat, brown ground beef until well cone.   Remove from

skillet, drain on a paper plate covered with paper towels, and set aside.

2.  In the same skillet, over medium-low heat, lightly brown Rice-A-Roni vermicelli

and rice in melted butter  until light brown.

3.   Add water, corn and seasoning packet.  Bring to a boil and then reduce heat.

Cover and simmer for 15 minutes or  until rice is tender.

4.  Stir in barbecue sauce\salsa, browned beef, and cheese.  Cover and let stand for 5

minutes or until cheese is melted.

      Yield:  6 servings.

Clean up:   Turn off the stove immediately after use.  Cleaning the kitchen is just as important as cooking.
