Cinnamon Applesauce

8    Yellow Delicious apples

      Water

1    teaspoon ground cinnamon

1    tablespoon lemon juice

¼   teaspoon salt

¾   cup light brown sugar

 

Core, peel and dice apples.  Place in a saucepan with enough water to cover apples by 1-inch.  Cover, bring to a boil and reduce heat to simmer.  When apples are fork tender, press through a sieve or food mill.  Add cinnamon, salt, lemon juice and brown sugar and mix.  Serve hot or cold. 

Yield:  3-4 half-pints.
