4 cups
fresh peaches, peeled, pitted and sliced
1/2 cup orange juice
2 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1 cup all purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1 large egg, lightly beaten
2 tablespoons butter, melted
1 tablespoon sugar
1/4 teaspoon cinnamon
Preheat oven to
350-degrees. In a bowl, combine the
peaches, orange juice, brown sugar and cinnamon. Transfer to an 8-inch round baking pan coated
with a spray of Canola oil. Whisk
together flour, sugar and baking powder.
Add egg and butter and then mix until crumbly. Sprinkle over peaches. Whisk together sugar and cinnamon. Sprinkle over batter. Bake for 35-40 minutes or until filling is
bubbly and topping is golden brown.
Yield: 6 servings.
