Citrus  Pork Chops/Ginger Peaches

Give Dad a big hug and thank him for all the wonderful things he has done for you.  For Sunday dinner, serve him an entrée of a citrus pork chop garnished with a ginger peach.   Boneless center cut pork chops are marinated in a citrus marinade for several hours.  Peach halves are sprinkled with ground ginger and baked along with the pork chops.   Perhaps serve with mashed potatoes, green beans and fresh baked rolls.   A great meal for Dad to enjoy!

 

Prepartion time;  About 15 minutes. 

 

Equipment you’ll need:  7 x 11 x 2-inch baking pan/rack, 2 cup measuring cup, measuring spoons, gallon plastic sealable bag, can opener, colander, small whisk, tongs, meat thermometer, and serving plates. 

 

Safety:   Use dry potholders to put pork chops into the oven and remove.  Ask an adult to halve the peaches for you. 

 

Recipe:

4    boneless center cut pork chops, about 1 pound

2    fresh peaches, halved   

 

Marinade

2/3   cup teriyaki marinade & sauce 

1/2   cup orange juice

2      tablespoons honey

1/2   teaspoon ground ginger

1/2   teaspoon garlic powder

 

1.   Preheat oven to 375-degrees. 

2.   Rinse off chops with cold running water and pat dry with a paper towel.

      Place in a gallon sealable plastic bag. 

3.   Whisk together all marinade ingredients in a measuring cup.  Pour into plastic

      bag over chops and seal. 

4.    Marinade for at least 6 hours, occasionally turning to cover. 

5.   Drain off marinade and place chops in baking pan.   

5.   Add peaches cut side up and lightly sprinkle with ginger. 

6.   Cover and bake for about 40 minutes until chops are well done or registers

       160-degrees on a food thermometer. 

7.   Let cool for a couple minutes and then serve chops with a peach garnish.

      Yield:  4 servings.

 

Clean up:  Turn off oven immediately after use.  Clean as you work, so you have lots of time to spend with Dad.
