Sarah’s “Lite” Recipes

 

Salad

2   cups mixed greens, torn into bite-size pieces

2   slices healthy-choice turkey or chicken, julienne

1   tomato, quartered

2   slices Swiss cheese, julienne

2   slices sweet yellow onion, separated into rings

 

Dressing

1/4  cup  light mayonnaise

1/2  teaspoon lemon juice

1/4  teaspoon salt

1/4  teaspoon fresh ground pepper

1/4  teaspoon dried  thyme leaves

1/4  teaspoon dried basil leaves

 

Divide greens between two salad bowls.  Top with meat, cheese and onions.

In a small bowl, whisk together dressing ingredients.  Place 1-2 tablespoon of dressing on each salad. 

Yield:  2 servings.
