Coconut
Cookie Nests
Too sweet to hide, these Coconut Cookie Nests are the perfect addition
to your Easter festivities. With
delicious egg-shaped chocolates nestled atop colorful cookie nests, these easy
to prepare treats are sure to create a “Hoppy” Easter. You might ask an adult to separate the eggs
whites, so they are yolk free. Prepare a
day ahead of time so the kitchen is spotless when the
Recipe
3 large egg whites
1/3 cup granulated sugar
2 cups shredded sweetened
coconut
2 tablespoons all purpose
flour
1/2 teaspoon pure vanilla
extract
12 chocolate nest eggs (Crunch
or Butterfinger)
Food gel in pastel colors
Preheat oven to 325-degreens.
Cover baking sheet with parchment paper.
Using an electric mix beat egg whites until foamy. Gradually add in granulated sugar. Stir in flour, coconut, and vanilla. Divide coconut mixture into 4 bowls. Add a drop of food gel and mix until colors
are dispersed evenly. Drop by
tablespoonfuls into 12 mounds, 1 1/2-inches apart. Press centers in slightly to form nests. Bake for about 20 minutes or until set and
lightly brown. Cool on baking sheet for
about 10 minutes. Transfer nests to wire
rack to cool completely. Place a
chocolate nest egg in each nest before serving.
Yield: 12 nests.
