Cake
A coffee cake is a rich, sweet cake like bread usually eaten for
breakfast or brunch. Prepare a basic
cake in less than 15 minutes. For
nutrition and flavor, stir in one cup
of your favorite chopped dried fruit
such as apricots, cherries, cranberries, pears or peaches. For a bit of crunch, sprinkle one-half cup of
pecans, walnuts, or sliced almonds over the topping. Serve warm with a cup of hot cocoa. Always clean up the kitchen.
Cake
2 cups all-purpose baking mix,
Bisquick, Jiffy, etc.
2 tablespoons granulated
sugar
1 large egg
2/3 cup
milk
Topping
1/3 cup all-purpose baking mix
1/3 cup packed brown sugar
1 teaspoon cinnamon
2 tablespoons unsalted
butter
Preheat oven to 400-degrees. Mix
together all cake ingredients and stir just to combine. Pour into an 8-inch round cake pan lightly
coated with a spray of canola oil. For the topping, stir together baking mix, brown sugar, and
cinnamon. Cut in butter with a
pastry blender until mixture is crumbly.
Bake for 25 minutes or until a toothpick inserted in center comes out
clean.
Yield: 6-servings.
