Colcannon
2 pounds baking
potatoes
1 pound green cabbage
1 small sweet
yellow onion, chopped
Milk
Butter
Salt and fresh
ground pepper
Preheat oven to 350-degrees. Peel, boil, and drain the potatoes. Shred the cabbage coarsely and steam until
tender. In a small amount of oil, sauté
the onions until golden brown. Run potatoes
through a food mill, add milk, and stir until desired consistency. Stir in cabbage and onions. Spoon into a baking pan coated with cooking
spray. Dot top with
pats of butter. Salt and pepper to taste.
Bake for 30 minutes or until heated through.
Yield: 6 servings.
