Colorful Southwest Salad

 

Quick and Easy

1   cucumber, partially peeled and diced

1   cup whole kernel corn, drained

1   cup black beans, rinsed and drained

2   tomatoes, seeded and diced

1   green bell pepper, chopped

1   red bell pepper, chopped

     Salt and fresh ground pepper to taste

     Sweet vinegar and olive oil dressing

    Tortilla chips 

 

In a large salad bowl, toss together the cucumber, corn, black beans, tomatoes and bell peppers. 

Drizzle with dressing. Serve on a bed of shredded lettuce. Top with crumbled tortilla chips. 

Yield:  6 servings.
