Cookie Pops

Kids Cooking

Wrap up a cookie pop and give to family and friends for Valentines Day.    Sandwich a spoonful of peanut butter between two vanilla wafers.  Insert a craft stick to make a pop.  Chill pops for a few minutes and dip into melted chocolate.  Decorate with sprinkles or use icing gel to write fun Valentine shorts on such as “Love” and “Mom.”  Wrap individually in a cellophane bag and tie with a colorful ribbon.   Enjoy cooking, but always clean up.

Recipe

24     vanilla wafer cookies

1/4    cup creamy peanut butter

1/2    pound Candy Kote Wafers, milk, dark, or white chocolate

         Candy decors or sprinkles

         Decorating writer gel

On half the cookies, spread a heaping teaspoon peanut butter onto the flat side of each.   Top with remaining cookies.  Insert a stick into the peanut butter making a cookie pop.  Refrigerate for a few minutes.   To melt the wafers, place 1/2-pound in a glass measuring cup.  Set microwave on defrost for 3 1/2-minutes.  Remove and stir to smooth.  Dip or spoon over melted chocolate, covering completely.  Decorate using your creativity.   To dry, insert sticks into a secured floral styrofoam block on place on a wax paper covered tray.  Place one pop in each bag and tie with a colorful ribbon.   Yield:  12 pops.
