Cucumber Salad

 

Farmer’s Market

 

1     cucumber, peeled and thinly sliced

1     sweet yellow onion, peeled and thinly sliced

       Soaking- 2 cups cold water and ¼ teaspoon salt

 

Dressing

¼   cup tarragon vinegar

1     tablespoons water

1     teaspoon honey

¼    teaspoon salt

¼    teaspoon fresh ground pepper 

      

Cover with salted cold water and let stand in refrigerator for several hours; drain.  In small bowl whisk together water, vinegar, honey, salt and pepper. Pour dressing over cucumbers/onions and toss to coat.   Refrigerate for at least 1 hour before serving.

Yield:  4 servings.
