3 tablespoons vegetable oil
¼ cup sweet
yellow onion, diced
4 skinless,
boneless chicken breast halves
1 cup sliced
fresh mushrooms
1 cup diced
tomatoes, seeded
1 tablespoon
lemon juice
Heat oil in a large skillet over medium
heat. Sauté
onion until tender. Add lemon
juice, chicken, mushrooms and tomatoes. Cook
over medium-high heat for 7 to 9 minutes on each side. Stir occasionally until chicken is cooked
through.
