Eggless Cake

 

Sarah’s “Lite” Recipes

1      cup granulated sugar

1      stick butter, softened

1      cup sour milk*

2 1/2cups cake flour

1      teaspoon baking soda

1/2   teaspoon cinnamon

1/4   teaspoon cloves

1      teaspoon vanilla

1      cup golden raisins

1      cup chopped pecans

 

Preheat oven to 350-degrees.  In a mixing bowl, cream the sugar and buttermilk with an electric mixer on medium speed.   In another bowl, sift together cake flour, spices, and baking soda.  Alternately add milk and dry ingredients to creamed mixture.   When all ingredients are mixed, beat on medium-high for 3 minutes to incorporate additional air.   Stir in vanilla, raisins, and pecans.    Pour into an 8-inch round pan coated with a spray of Canola oil.  Bake for 30 minutes or until a toothpick inserted in center comes out clean. 

 

*To sour milk, add 1 tablespoon vinegar to 1 cup milk.  Let stand for 15 minutes, stirring occasionally.
