Fantastic French Toast

 The popular history behind French toast is that it was created by medieval European cooks who needed to use every bit of food they could find to feed their families. They knew old, stale bread could be revived when moistened with milk and enriched with eggs. The traditional method of cookery was on a hot griddle prepped with a little butter or oil, quite like today.  Prepare the peanut butter flavored maple syrup first so it is ready to pour over the hot French toast. Always clean up the kitchen when you are done cooking.

Recipe

3     large eggs

1/4  cup milk

1     teaspoon pure vanilla extract

2     tablespoons unsalted butter

4     slices whole grain day old bread

 

In a shallow bowl, whisk together eggs, milk, and vanilla.  In a nonstick skillet melt butter over medium heat.   Dip bread slices in egg mixture, coating both sides of each.  Fry bread until golden brown on one side and then turn and fry second side.  

 

Topping

4     tablespoons chopped peanuts

3/4  cup maple flavored syrup

1/2  cup creamy peanut butter

 

In a small saucepan stir together maple syrup and peanut butter over medium heat.   Sprinkle 1 tablespoon peanuts over each slice of warm French toast and then pour syrup mixture over.  

Yield:  4 servings.
