Fish and Chips
1 pound cod,
halibut or flounder
Batter
1 cup
all-purpose flour
½ teaspoon
baking powder
½ teaspoon garlic
powder
½ teaspoon fresh
ground pepper
½ teaspoon
paprika
1 cup milk
Cut fish into serving pieces. Rinse under cold running water. Drain and pat dry with paper towels. Whisk together batter ingredients and let
stand for a few minutes. Dip fish into
batter. Deep fry fish 2 pieces at a
time, about 3 minutes on each side.
Remove and drain on paper towels. Serve immediately with chips.
Yield: 4
servings.
Chips- Fry before fish!
4 medium red
potatoes
Salt
Vegetable oil
Preheat oil to 365-degrees. Peel and cut 4 medium red potatoes into ¼ -inch
slices. Rinse under cold running water and
pat dry with paper towels. Deep fry
potatoes in hot oil a few at a time, for 4 to 5 minutes or until lightly browned. Remove and drain on paper towels. Sprinkle lightly with salt. Cover and keep in a warm oven until fish is
fried.
