Focaccia Bread

1   pound loaf frozen bread dough

 

Topping

1  6-ounce can tomato paste

1   teaspoon Italian seasoning

1   teaspoon honey

3    Roma tomatoes, thinly sliced 

      Olive oil     

      Parmesan cheese

      Fresh ground pepper    

      Fresh rosemary, chopped

 

Thaw loaf of bread dough.  Let rise till double in bulk.  Punch down and roll out into an 11 x 14-inch rectangle.  Dipple top of dough with fork.  Lightly brush with olive oil.  In a small bowl, mix together tomato paste, honey and Italian seasoning.  Brush on tomato mixture.  Place tomatoes slices on top.   Sprinkle with fresh ground pepper, chopped rosemary and Parmesan cheese.  Bake in a preheated 375-degree oven for 25 minutes.  Cool on wire rack.
